Baeksam (white ginseng) is dried under the sun in order to reduce the moisture content to below 14%. This helps to maintain the products' lifespan for a long time, but the sun-drying method can also decrease the amount of therapeutic components. In other words, all forms of therapeutic components are preserved, but the quantity is reduced. Hongsam (red ginseng) is steamed and then dried after removing the skin, which can cause some of the beneficial components to be destroyed, leaving only a small amount, but maximizing the content of each nutritional component.
